 Sopa Andina

Prepare this delicious typical Venezuelan breakfast dish.

INGREDIENTS:

  • 1 boneless chicken breast cut in little pieces
  • 1 liter chicken broth
  • 2 eggs
  • 1 stalk of celery
  • 1/2 red bell pepper, sliced in squares
  • 3 cloves garlic, minced or sliced in pieces
  • 1/2 red onion, sliced in squares
  • 3 peeled potatoes cut in little pieces
  • 1 cup milk
  • 1/2 table spoon sea salt

DIRECTIONS:

  1. In a medium size cooking bowl at the chicken broth together with the chicken and potato pieces and let it cook on high heat for about 6 – 10 minutes until potatoes are soft.
  2. At the chopped ingredients: celery, onions, garlic, red bell peppers, sea salt and milk to the bowl and leave it cooking for about 4-6 minutes.
  3. Add the 2 eggs and cook until eggs have nice white texture, about 2-5 minutes.
  4. Serve and enjoy, you can accompany this delicious breakfast dish with a Arepa.
